BUTTER: Béarnaise

  • Butter Bearnaise.
    Tip! Make your own béarnaise sauce in 5 minutes: Take one egg yolk, add 1 tbsp of water, and whisk the yolk over a double boiler (preferably with a hand blender) until it reaches about 60 degrees. At the same time, melt a stick of BUTTER until it reaches about 58 degrees. Then slowly pour the melted butter in a thin stream. Done! If needed, add more tarragon or vinegar for extra acidity.
